Katsuobushi (Japonca: 鰹節) veya okaka (おかか), kurutulmuş, fermente edilmiş ve tütsülenmiş bir yazılı orkinostur. Genellikle dashi yapımında kullanılır.
Katsuobushi'nin belirgin umami tadı yüksek inosinik asit içeriğinden gelmektedir.
